  • Espresso machine.
  • Metal mug.

Method of preparation:

  1. Fill your stovetop espresso maker with water according to the manufacturer’s instruction.
  2. Add the finely ground coffee to the machine and place the espresso maker over moderate heat.
  3. While the coffee is brewing, add sugar in the metal mug. Since the Cuban coffee is characterised by its sweetness, you will need about 1 to 2 teaspoons of sugar per cup although ultimately the coffee’s sweetness is up to you.
  4. As soon as the coffee starts percolating, pour a small amount of coffee over the sugar and return the espresso machine to the heat. Beat the sugar and espresso using a spoon to create a pale paste mixture.
  5. Once all the coffee has been brewed, pour slowly into the metal mug mixing it with the paste until all the sugar has dissolved. A thin layer of sugar foam (crema) should float on top of the coffee.
  6. Pour the coffee into the small Cuban coffee cups “tacitas” and serve immediately.

Making the sugar foam is the process that defines the Cuban coffee thus you cannot beat the sugar mix excessively. If you pour too much coffee into the sugar accidentally, just continue the beating process until you achieve the sugar crema.
